"Honey cake for Rosh Hashana." Original recipe yield: 2 - 9 inch loaf pans.
INGREDIENTS:
* 3 1/2 cups sifted all-purpose flour
* 1/4 teaspoon salt
* 1 1/2 teaspoons baking powder
* 1 teaspoon baking soda
* 2 teaspoons ground cinnamon
* 1 1/2 teaspoons ground allspice
* 4 eggs
* 3/4 cup white sugar
* 4 tablespoons vegetable oil
* 2 cups honey
* 1/2 cup strong brewed coffee
* 1/2 cup almonds
* 1/2 cup raisins
* 1 1/2 cups honey
* 2 tablespoons lemon juice
* 1/2 cup water
* 1/2 teaspoon lemon zest
* 2 ounces slivered almonds for topping
DIRECTIONS:1. Preheat oven to 325 degrees F (165 degrees C).
2. Sift together the flour, salt, baking powder, baking soda, cinnamon and allspice. In a separate bowl, beat the eggs, gradually adding the sugar. Beat until thick and light in color, about 5 minutes. Beat in the oil, honey and coffee. Stir flour mixture into egg mixture. Chop the almonds coarsely and mix with raisins. Stir into batter.
3. Oil the two pans and line the bottom with waxed paper. Oil again. Fill each pan with batter to within 1 - 1 1/4 inches from the top. Bake for 65 to 75 minutes until cake tests done. Do not overbake. Let cool 10 minutes and remove from pan.
4. To Make Glaze: Boil together 1 1/2 cups honey, lemon juice, lemon zest and water. When glaze reaches a thick consistency, remove from heat and drizzle over cake. Sprinkle with almond slivers.

This is a cake which benefits from the addition of the honey, making it moist and sweet.
Ingredients:
3 oz Butter
3 oz sugar
2 Eggs, beaten
4 oz clear honey
8 oz self raising flour
1 level teaspoon baking powder
Method:Set oven to 350F or at gas mark 4. Grease and line a seven inch round cake tin. Cream together the butter and sugar in a bowl. Adding the eggs gradually, beat in the honey. Sift together the flour and baking powder and stir into the honey mixture. Transfer the mixture to the tin and bake for about 35 to 40 minutes or until a skewer inserted, comes out clear. Leave in the tin for about 10 minutes to cool then turn out onto the wire rack.

4 ozs. honey
4 ozs. brown sugar
1/2 lb. flour
4 ozs. butter or margarine
A little milk
1 teaspoonfull cinnamon
1 egg
1/2 teaspoonful bicarbonate of soda
Castor sugar for dredging
Sieve together flour, cinnamon and bicarbonate of soda. Cream butter and sugar. Separate the egg yolk from the white. Beat the yolk into sugar and butter, then add the honey gradually. Stir in flour with a little milk as required, and mix all together lightly. Whisk the egg white into a stiff froth, and fold into mixture. Half fill small patty tins with the mixture; dredge the top of each with castor sugar. Bake in a hot oven for 20 minutes. When ready sprinkle a little more sugar.
